Laney and Ryan King devised The Crawfish App in January 2013 after having trouble figuring out where to get crawfish in the Baton Rouge area. They simply wanted an app that could show them who was serving crawfish and knew others were probably looking for something similar. OUCH: Casian Crawfish's Carolina Reaper crawfish challenge is only for the strong and crazy brave The app, released in February 2017, is constantly being updated, with most every crawfish place in Houston in their database. Each year when crawfish season rolls around , flocks of eager Houstonians head to the city's many Viet-Cajun crawfish haunts to grab literal pounds of this fusion delicacy. From the carefully tossed spices and aromatics, to the communal style of eating, to the immigrant origin story itself, the Viet-Cajun phenomenon perfectly encompasses Houston in all its humid, diverse, zesty glory. Here's what you need to know about one of the cuisines that put H-Town on the map. Where did Viet-Cajun crawfish come from? From the get-go, Houston's proximity to Southeast Texas—dubbed "Lapland" by the Texas Almanac for being the place "where Cajun culture overlaps into Texas"—made it a prime incubator for fusion cuisine. Following the fall of Saigon in 1975, … [Read more...] about Everything to know about Viet-Cajun crawfish, Houston’s signature cuisine

It's Crawfish Week at Chron! For four days, the food team will be dropping fun stories about Houston's favorite crustacean. Read all our crawfish coverage here. HO CHI MINH CITY, VIETNAM — Freshwater shrimp, more specifically giant river prawns, are the star of the menu at chef Nikki Tran's Kậu Ba Quán . At first glance, it resembles any of the hundreds of quán nhậu, or open-air restaurants meant for plentiful eating and drinking, in Ho Chi Minh City, colloquially referred to as Saigon. A Saigon native, Tran serves the prawns in the quintessential Vietnamese preparation: rang muối, or salt-roasted. Sporting a slight char, these typically come with a dipping ramekin of simply salt, pepper and a whole calamansi. But, as a result of Tran's time in Houston in the early 2000s at the onset of the Vietnamese-Cajun crawfish movement , the hulking crustaceans here also come in a Gulf Coast version: generously slathered in Cajun garlic butter atop potato halves, corn and spiced … [Read more...] about Chef Nikki Tran is building a culinary bridge between Houston and Saigon
